Buffalo Cauliflower Bites (Gluten Free)

    Gluten Free buffalo cauliflower bites that are delicious, crispy and can be as spicy as you like! They are made with cassava and almond flour for the perfect breaded texture. Eat them as a spicy side or use as a main dish.

    I am a huge fan of spice, but at the same time I don’t want the spice to outshine the flavor. These buffalo cauliflower bites have the perfect ratio of seasoning to spice, with the option of specializing to your own taste.

    Flour Choice

    I like to divide the flour and use half cassava flour and half almond flour, both of which are gluten free. Cassava flour is very absorbent, while almond flour is more flakey and falls apart. In my experience, combining the two creates the perfect breading that holds together yet remains crispy. Not to mention that cassava flour is a resistant starch and almond flour also contains prebiotic fibers so all your little microbe buddies will be having a feast with you.

    Begin Cooking

    To start, preheat the oven to 425 degrees. Mix together all of the dry ingredients including the flours and spices. Add in the wet ingredients including the bone broth and egg. If you do not have bone broth at hand, water will do just fine. Cassava flour is very absorbent, so I always recommend waiting a minute after adding the liquid ingredients to re-stir. You might need to add more depending on your ratios. The texture should be like pancake batter.

    Mix it up!

    Once you have the breading ready, toss the chopped cauliflower into the mix and stir until evenly covered. At this point, you are going to get a baking sheet and parchment paper ready. In my experience, the parchment paper is a necessity. You can do it without however, your cauliflower will almost certainly stick to the baking sheet and be quite a mess. Every time I forget the parchment paper, so much of my breading went to waste stuck on the pan!

    Once you have your cauliflower bites spread evenly on the parchment paper lined baking sheet, spray with avocado oil spray. This will give a nice browning effect and help crisp the bites. Place in the oven at 425 degrees for 20 minutes. Remove from the oven and flip the bites, returning to the oven for a final 10 minutes (total cook time 30 minutes). After they have finished cooking, cover with your favorite buffalo sauce, mine is the Noble Made Medium Buffalo Sauce or Primal Kitchen Buffalo Sauce. If you have a lectin sensitivity, I would suggest starting out with the Noble Made Sauce first and test the Primal Kitchen in a small dose before use.

    Enjoy the bites as a stand alone dish or add them with your favorite meat. It is a great side to ribs or roast chicken. Some sautéed or baked veggies also pair excellently.

    Gluten Free baked buffalo cauliflower bites which can be used paired with a main dish or shine as the solo star.

    Ingredients

    • 1 head cauliflower, chopped into medium pieces

    • ¼ cup cassava flour

    • ¼ cup almond flour

    • ½ tsp salt, pepper, onion powder, paprika, garlic powder

    • ¼ tsp porcini powder (or mushroom powder)

    • ¾ cup bone broth or water

    • 1 egg

    • Avocado oil spray

    • ⅓ cup buffalo sauce

    Directions

    • Preheat oven to 425 degrees
    • Cut cauliflower into desired sized pieces – typically bite sized
    • In a large bowl mix together dry ingredients (flours and spices)
    • Add the bone broth (or water) and egg and mix thoroughly
    • Let sit for 1-2 minutes to let the cassava flour absorb the liquid, stir again
    • Add in cauliflower and mix until evenly covered
    • Place cauliflower on parchment paper covering a baking sheet, evenly coat with avocado oil spray
    • Bake for 20 minutes at 425 degrees, flip each cauliflower bite and bake for 10 more minutes
    • Remove from oven and coat in buffalo sauce

    Notes

    • My favorite buffalo sauces are Noble Made Medium or Hot Buffalo Sauce or Primal Kitchen Buffalo Sauce
    • Don’t forget the parchment paper!!
